Been in the mood for grilled cheese sammiches as of late and caved tonight. I fixed four-cheese grilled cheese sammiches. And grilled cheese is one of the most tasty, decadent, artery-clogging comfort foods around today.
Ingredients:
Potato Bread (4-6 slices)
Colby-Jack
Monterrey-Jack
Pepper-Jack
Mozzarella
Pepper
Garlic
Parsley
Butter
2 Russet Baking potatoes (peeled and sliced)
Butter bread and place half of the slices on griddle. Layer your cheese to desired amount. Place remaining bread slices on top and season to taste with Garlic and Pepper. Cook on medium heat to desires doness of until cheese is melted and dripping off the sides.
While the sammiches are cooking place sliced potatoes in 400 degree oil and cook until golden brown or until desired doness.
Once everything is done, plate and serve.

Last time I made grilled cheese sandwiches, I used a smoked cheddar and a habañero pepper Jack that I found at a farmers' market; instead of butter, a thin layer of mayonnaise, but the same procedure. While the pan was still hot, I sautéed some onions and sweet red peppers as a side/garnish.
The results weren't on the plate for long!
