Squirrel tummy is a famous rural Austrian national dish. They let them bleed out into a wooden bucket and the blood is mixed with sour milk and corn flour and poured into hot water on a low boiling flame to make squirrel soup nuggets. They are sold fried out crispy and spicy on sticks (squirlkitten stickies). Prince Eugene was said having had a few spoonfuls of pickled squirrel balls before begating his concubines. In short, squirrels are irreplacable for the native cuisine.
