While this is a fancier version, this is pretty much what I eat at work. Every day.

Start with a tortilla. The ones I use are 8 to a 3.99 pack (So 50 cents)

Paste half an avocado into mush, spread that along the surface somewhat evently (Avocado was a dollar, so 50 cents)

Used a quarter package each of frozen spinach and frozen 3 pepper & onion blend, defrosted via microwave (Both packages were a dollar, so the ammount I used was... 50 cents)

6oz of chopped chicken thigh, courtesy of El Polo Loco (99 cents, you can get it done cheaper yourself but I'm lazy)

A half handful of shredded Colby Jack cheese (3.99 for a package, used in decent portions can last me about two work weeks, so 10 days, so 39 cents)

Nuke in microwave to warm up for 55 to 1:55, your choice/preference. If you have a toaster oven that can fit it, use that instead.

Roll up and eat. Tonight I'm serving it with a salad mix and Simply Apple applejuice. :3
