Well, the title says what it is...

This is actually from a couple of months ago and I never uploaded it. I don't have a specific recipe (I wasn't jotting down notes at the time) but I can tell roughly what I did.

I used a knife to make a hole in the pork tenderloin. I stuffed Jalapenos with a mixture of cream cheese and garlic and pushed them into the tenderloin. I then wrapped the loin in bacon and seared it. Finished it in the oven. While it cooked I made a simple pan sauce using the Fond of the pan involving chicken broth, mustard, onion, garlic, sherry, and a little butter and cream added near the end. Poured through a strainer to get the large chunks out and make the sauce smooth. Served under slices.

The corn salad had fresh jalapenos, lime juice, lime zest, tomatoes, corn, cilantro, and olive oil together and made a day in advance to let the flavors blend.
