Celebrate the glory and deliciousness of cupcapes with these spectacular sweet treats from the kitchens of

Being a bit of a foodie, I love everything about food. My favorite chef in books and television is Anthony Bourdain. He introduced me to the world of food pornography, this sort of gratuitous enjoyment of food for food's sake. It's hedonistic, I admit but that's part of what I relish about it.
My family is notorious for taking pictures of their food, whether they cook it or not, and so we call each other purveyors of food porn XD These are some of the cupcakes I took on, rather ambitiously, after my mom and I watched Cupcake Wars.
They're devil's food cake and white cake cupcakes, made with diet coke and diet sprite, so about half the calories. The frosting however more than makes up for it, being my favorite cream cheese frosting (nouffandel- spelling mistake imminent- so still less than usual) and I found edible glitter and these gorgeous sprinkles at a local store.
I'm looking forward to trying out more complex designs and getting my own set of tips and a bag to try more decorative patterns :) As it was, I had one tip, a very old dispenser and these were for family, so they got to be guinea pigs.
What you need for the cupcakes:
Box of cake mix (any flavor really)
Can of soda, either diet or regular (diet cuts calories and sugar)
A note about cake mix and soda pairings, I paired dark cake mixes with dark sodas. So when I did a chocolate cake, I used diet coke, but doing a white cake, it was diet sprite. I did both here. You can however mix it up by using flavored sodas to get a slight flavoring to your cupcakes, like a raspberry waist watchers soda or a grape soda to get pink or purple cupcakes without having to muck about with food coloring and it gives nifty flavors. Orange would be amazingly fun, so would mountain dew or grape. That might be a project for halloween :3
For the Frosting:
A 16 oz. bar of cream cheese (softened)
A stick of butter (1/4th of a pound, softened)
2 cups of confectioners sugar
1 tbsp of vanilla (I use a metric crapton of vanilla because I like vanilla. You can use vanilla or any other flavoring really. Lemon is a pretty refreshing taste, so is lavender.)
Directions:
For the cake, this is devilishly simple, and paired with the soda, nobody would guess that you used something out of a box. They come out moist and lovely. You just mix up your cake batter, and instead of using oil, water and eggs, you pour a single can of your choice of soda (I used diet coke for the devil's food cake, and diet sprite for the white cake). It looks really light and fluffy, but do not worry about the consistency, just spoon your batter into the cupcake tins as you normally would. Bake them at 350 degrees Fahrenheit, for ABOUT 9 minutes in an electric oven on a middle shelf. Be careful to keep an eye and make sure they don't burn. These are slightly lighter than your average batter.
For the frosting:
I used a stand mixer because I'm -lazy-. Put your softened cream cheese, your stick of butter and your vanilla in the bowl, cream them together until you get a juicy consistency then slowly start adding your confectioners sugar and blend it until you get a consistency you like. Cream cheese frosting is very smooth and unlike butter creams or simple sugar frostings they don't get "grainy" after a day or two in the fridge. This is also the stage where you add any food coloring you really want to get the colors you like.
Chill your frosting for a few minutes before you put it into a pastry decorating bag and tips. I used a very small star tip here and just did little rosettes. You can tell that the dispenser I used got a little too warm and a bit melty. My first time really using a bunch of tips so it came out well :)
For decoration I got some blue sugar sprinkles and silver edible glitter from a local cooking wares place here in Maine. ^_^
