All wrapped up for a dinner delight, try this out for a lasagne with a difference from the kitchens of

When I was at Anthrocon this year, -like a good little fur- I ate at Furnando's... Actually most of my meals were taken there! I tried a lot of his menu, including the bacon-chocolate-chip cookies, and of course the Lasagna Wrap. I was so taken by the Fernando story, and the wrap's goodness, that I decided to attempt a version for the average Coyote kitchen. I'd love to have tried Fernando's recipe, but lacking that, I tried my own version. I know it ain't nearly as good as F.D's... (the Magic ain't there, fur sure.)
This recipe can be made with just about any common grocery items, or if you're a gourmet, try your best ingredients... Just enjoy, it's tasty and isn't difficult.
LASAGNA WRAPS (6 servings)
6 large wheat tortillas or wraps
1 cup Pizza or spaghetti sauce (I've used Ledo's and Ragu)
1/2 cup Ricotta cheese
small can (needs about 1/4 cup) of canned spinach, drained
small quantity of fresh oregano and/or Basil
1 clove garlic, minced. If you're a were, vampire or otherkin you may wish to leave this out.
18-20 small italian meatballs (make 'em yourself or use store-bought frozen)
package of sliced pepperoni
package of sliced provolone cheese
package of shredded mozzorella cheese
Preheat your oven to 375 or 400 degrees. A toaster oven might do these quite nicely as well. But I ain't got one.
Mix about 2 tablespoons of spinach into 1/2 cup of Ricotta. I like to mix in some fresh oregano and basil too.
Spread out a wrap on a tray, then spoon in some sauce, then some of the ricotta. Add a bit of minced garlic.
Next, place 3 or 4 meatballs in line, cover with a half slice of provolone, then a few slices of pepperoni, then top with some shredded mozzoreala cheese.
Fold and wrap the wrap. You can bake these right away, or set them aside for baking later.
Bake at 375 to 400 deg. F for 15-20 mins, use your sense of judgement. If you are a vulpine, I'd say just try anything that won't burn your food or den down. XD Just kiddin!
