1 Pound or so of Chorizo
1 cup of loosely packed dark brown sugar
1/2 cup of Kentucky Bourbon
Brown your chorizo in a frying pan and then move to a sauce pan. Add the bourbon and sugar. Bring to a boil. If you're feeling adventurous you can flame it (Use a long match stick to light it and make sure your fire extinguisher and pot top are on hand.) Lower temperature and simmer for 1 hour. Keep an eye on it, it kept wanting to bubble up on me, and it would probably suck if it boiled over.
And yeah, it's good!

Oh cool! The alcohol can flame up, so you want to take some precautions to make sure it doesn't flame up TOO much! Like I said, make sure you have the top of the pot so you can extinguish it if it seems too extreme, and a fire extinguisher on hand if it seems REALLY extreme! If you're going to light it intentionally, do so with the heat off and it should flame out on its own in a minute or two. If it catches on its own, just move it off the heat and stay calm. It looks intimidating the first time you do it, but so far I haven't managed to burn the kitchen down or anything!
You can use any liquor you like the flavor of. I could see tequila working pretty well for this. Scotch might be good, too.
