Linguine alla Cabonara
A recipe out of one my many cookbooks, we decided to carry on with it and add a few more ingredients to the pan~
This recipe is pretty easy to make, and isn't too heavy on the amount of ingredients! Definitely something for us poor college folk ^^
Ingredients
-1 lb dried linguine
-1 tbsp olive oil
-8 oz pancetta or lean bacon, chopped
-3 cloves of garlic, diced
-1 medium tomato, chopped
-1/2 of a large onion, chopped/diced
-4 eggs
-1/4 cup heavy whipping cream (recipe calls for light cream, but the heavy has a much bolder flavor)
-1/4 grated or shredded Parmesan cheese
-salt and pepper TT (to taste)
Directions
1. Bring a large pan of slightly salted water to a boil.
2. Add the pasta and return to boil, cooking for 8-10 minutes, or until tender.
3. Meanwhile, heat the olive oil in a skillet. Add the bacon/pancetta, garlic, onion, and tomato. Cook over medium heat for about 8-10 minutes, stirring quickly.
4. Beat the eggs with the cream in a small bowl and season to desired amounts with salt and pepper.
5. Drain the pasta and return to pan, adding the egg/cream mixture and half of the Parmesan cheese. Stir well.
6. Mix in the bacon, onions, garlic, tomato, and the rest of the Parmesan to the pasta.
7. Enjoy!
This dish has become a staple for my home. It's quick and easy, both on the time it takes and on your wallet, and can easily be expanded with the addition of a few items. Try adding sauteed mushrooms with it!
Spring Salad with Citrus Vinaigrette
Made these while out at my grandparents in Tampa, FL for spring break. It was the last night there and we all had a big dinner that me, my grandmother, and aunt n uncle cooked for. I got to try out a new cookbook that I had recently gotten and it had the vinaigrette recipe in it, so I gave it a shot. I had my doubts at first, but it turned out to be a total success!
Spring Salad
Ingredients
-1 bag of Spring Mix salad (I forget what brand it was, but hey, any spring mix will do)
-1 small carton of baby bello mushrooms, sliced
-1/2 cup carrots, julienne (1/8x1/8inch sticks)
-6oz dried cranberries
-1 golden apple, cut into small chunks
-crumbled blue cheese (Optional)
Directions
1. Empty bag of salad into a large bowl
2. Slice the mushrooms, julienne the carrots, and chop the apple
3. Mix together.
Citrus Vinaigrette
Ingredients
-1/4 cup lemon juice
-1/4 cup lime juice
-1/3 cup orange juice (the original recipe calls for 1/4 cup orange juice, but when we made it like that, it just didn't seem sweet enough, so we added a little more. Don't make it too sweet by itself though, as the salad and apple really do bring out the flavors!)
-5 basil leaves, chopped finely
-1 1/4 olive oil
Directions
1. Combine the three juices and stir together, add in the basil.
2. Slowly add the olive oil to the juice mix, whisking to emulsify the liquids together.
***Being the way these liquids act with each other, after a while, they will separate from each other. To fix this, all you need to do is whisk/stir them for a little bit and it'll mix back together.***
These two items go great together, the apples really partner well with the citrus and the greens with the olive oil. It's quick, healthy, and a new way to look at your boring ol' salad :3

Parma-Wrapped Chicken
Yesterday, me and my family had a few chicken breasts left in the freezer and wanted to try something different. Going through a few of my many cookbooks, I found this recipe. I believe I have found my favorite chicken recipe <3
Parma-Wrapped Chicken
Ingredients
-4 chicken breasts, skin removed
-6 oz soft cheese, flavored with herbs and garlic (Used goat cheese with a big pinch of Oregano and a smaller pinch of Thyme)
-8 slices Parma Ham (prosciutto) (it's basically really thin and lean bacon. Full of wonderful flavor, and you pay well for it too. The 6oz package we got was about $6, so a dollar an ounce)
-2/3 cup red wine (don't worry about getting a really fancy wine for this, dad bought a cheap $6 bottle of Cabernet, and it worked beautifully for cooking. Drinking it was another story.....let's just say it was priced accordingly..)
-2/3 cup chicken stock
-1 tbsp brown sugar
Directions
1. Using a sharp knife (preferably a fillet knife) and make a horizontal slit along the length of the breast to create a pocket.
2. Beat the cheese with a wooden spoon to soften it and mix the herbs and garlic into it. Spoon the cheese into the pockets of the chicken.
3. Wrap two slices of the Parma ham around each breast and secure with a length of string (Make sure to NOT use anything other than non-treated cotton. Nylon is NOT SAFE for cooking.)
4. Pour the wine and chicken stock into a large frying pan and bring to a boil. When the mixture just starts to boil, add the brown sugar and stir to dissolve it.
5. Add the chicken breasts to the mixture and simmer for 7 minutes, flip them, and then simmer for 8 more or until juices run clear. (make sure to flip them, it allows the chicken to cook evenly)
6. Remove chicken from pan and set aside somewhere to keep them warm.
7. Reduce the wine/stock mixture to a sauce consistency (this shouldn't take too long, maybe five minutes if that). Remove the string from the chicken and cut the breasts into slices. Pour sauce over the chicken and serve.
Served with a Spring Mix salad (not with the vinaigrette in another submission) and also a box pasta from Aldi, I believe it was herb and butter? Some seriously good box pasta <3
This is now my favorite chicken recipe. The wine/stock mixture has an incredible flavor. And to even make it better, some of the cheese from inside the chicken may/probably will leak into it, giving it yet another boost in flavor. This is definitely going to become much more frequently made at home. Also, this was my first real attempt to making a dish look more..."fancy". Think it worked?
Cookie Dough Dip
Not really much to say on this one, maybe the only thing is that the dip came out much darker than the recipe's photo..I think it was the ground up chocolate chips that was put in. Oh well~
Super rich, super fast, and super good <3

Ingredients
-1 package (8 oz) cream cheese, softened (suggest putting it in the microwave for about 10 seconds. It doesn't take fast at all to warm up)
-1/2 cup butter, softened
-1 cup powdered sugar
-2 tbsp brown sugar
-1 1/2tsp vanilla extract
-1 cup chocolate chips (we used minichips, but you could also use mint or something else if you like!)
-1 cup toffee bits (didn't add this and the dip was still really good, just a matter of taste)
Directions
1. Whip the cream cheese and butter together. (be ready for a slightly sore arm if you aren't used to whisking!)
2. Add all of the remaining ingredients and mix until well combined.
3. Serve with graham crackers and/or apple wedges.
It's quick, it's easy, and sure to satisfy any sweet tooth's cravings. The cool thing about this one, is that you don't Have to use chocolate chips! You can easily substitute it with crushed up candy or something. Snickers, Twix, Oreo, m&m's, skittles, etc.
Concoct something intriguing ;3
