If I recall correctly there's a Japanese dish called "Kitsune Soba." Noodles in a broth with all sorts of vegetables and I believe boiled egg and finely sliced meat.

Kitsune soba is usually soba noodles with deep fried tofu, and is really good. The boiled egg is usually a component of Tsukimi soba, and like most Japanese dishes, the egg is added raw; it poaches in the hot broth.

There are lots of regional variants, though! I've actually never had tsukimi soba, as no place nearby serves it, though I hope to try some the next time I'm in Japan. You should come along! :)
