These sensational georgous golden Scotch eggs come to us from the kitchens of
chrismukkah
* ...Otherwise known as cholesterol bombs, heart attack inducers and ultra-fattening deliciousness :P
I used:
4 hard-boiled eggs (but, only hard boiled them for about 9 minutes, so they would still be a bit undercooked inside)
sausage (you can use any kind that is still in the casing- I used maple flavored breakfast kind- two snausages for each egg)
1/2 cup breadcrumbs (again, you can use any kind of breadcrumbs- I used Italian flavored, but you could use toasted rye, sourdough, multigrain bread or panko crumbs)
Peel off the shells from the hardboiled eggs, then- Get two small bowls- one for the snausage and one for the breadcrumbs- FULLY coat the egg with the snausage, then roll it in the breadcrumbs.
Then just heat your oven to 350 degrees- get a cookie sheet or something and cover it with a sheet of parchment paper, and throw the coated eggs on the sheet....and let cook in the oven for 15 to 20 minutes, then cool and serve- though I let mine cook for an extra five minutes, just in case!
And YES, normally these would be fried, wrapped in bacon and etc., but um...This was good enough to stand on its own :P
