In the context of MLP, it goes like this..

Yearling = Newborn
* (Unused so far)

Foal = Child
* (or Fool..)

Filly/Colt = Girl/Boy
* (In the same way "Hey you guys!" is used in reality, even if those in the group are female)

Mare/Stallion = Woman/Man
* (Self-explanatory)

Basically, the last ones aren't used much in the show both because of the connotations associated with the words; "of breeding age", and also because they imply, even require, the subject to be older. And just as in the real world, it can be considered offensive to call someone a name inappropriate to their age, thus they default to the same girls/boys/guys/gals expression real people do.

I'm well aware of how they use it in the show. I happen to run a MLP based room. In written human context, since earth/humanity is not based on the show, Filly implies under the breeding age, thusly a child pony.
