A charming chicken dish full of flavour from the kitchens of
kajitorataotsu
Found this recipe last week on that lovely website called tumblr and HAD to try it.
(not the best photography in the world, but I was really hungry and couldn't wait to eat XD )
Stuffed Chicken with Goat Cheese
Ingredients
3 Chicken Breasts
1/4 cup goat cheese
1/2 teas basil
1/2 teas thyme
1/4 black pepper
3 slices bacon (or more depending on size of breasts, as we needed 2 per breast)
toothpicks
Olive Oil
Preparation:
Slice goat cheese into thin strips. (I did about 1/3 inch thick lengthwise of the bar of cheese)
On a flat surface pound out your chicken to 1/4 to 1/2 inch thick. Lay the goat cheese in the center of each piece of chicken and sprinkle basil, thyme and black pepper evenly over each (add a bit of salt too, it seemed to be needing it). Using toothpicks to secure, fold the chicken up and wrap in bacon.
Preheat oven to 375F.
Heat oil in a skillet. Place chicken in skillet and cover for 5 minutes. Rotate and brown on all sides.
Transfer skillet to oven (or use a new baking dish) and bake for 15-18 minutes.
Pull them out and take out the toothpicks before serving/eating.
The dish would do well with some sort of pasta, either with a bechamel sauce or pesto.
This was a really simple, and delicious, dinner for me and my family, and we served it with fresh salad and garlic bread. Only things I think we needed to do instead were to add some salt, as it was lacking in such, and maybe fry it a little more on each side so the bacon has a chance to give more flavor in the long-run.
