Beautiful bread packed full of flavour from the kitchens of
kajitorataotsu
Found this recipe in late November and a friend of mine *COUGHMOONYCOUGH* loves pumpkin and 'demanded' we make it. So, here it is! Even went a little over the top with it and added a few extras to it.
Pumpkin Bread
Ingredients:
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil (we used 3/4 cup and it came out completely fine, so no worries if you skim a little away from a whole cup)
2/3 cup water
2 teaspoons pure vanilla extract
2 1/2 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
2 tablespoons pumpkin pie spice
(OPTIONAL)
1 cup chocolate chips
TT dried cranberries
Directions:
1. Preheat oven to 350 degrees F. Grease and flour two (or in my case, three) 8.5 x 4 x 2.5 inch loaf pans.
2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine pumpkin, eggs, oil, water, vanilla and sugar until well blended.
3. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until well combined.
4. Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the prepared pans. (When we poured the batter into the pans, we ended up needing a third one, this recipe makes a LOT of batter. Also, this is the time where you want to add any other ingredients that you want to "spruce" up the bread, like chocolate chips. We used about..a cup of chocolate chips, maybe more; and then I sprinkled dried cranberries atop my personal loaf, it came out wonderfully)
5. Bake in preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
While a little messy to make, probably at my own fault XD, this is a pretty easy bread to make and can be used for breakfast, a snack, and even as dessert! It's got a wonderful flavor, great density, and is just right for filling your home up with the drool-worthy scent of deliciousness <3
