Is breakfast boring and getting you down then try this uplifting beautiful bake from the kitchens of

After a while breakfast gets really boring and one-noted. So it's always good to just shake things up and do something different. Here is MY version of a Southern favorite. It's basically an easy quiche, baked in an iron skillet, with a hashbrown crust.
The best part is that this is HIGHLY customizeable... don't like something I have in this recipe? Then add your own combo of fillings and spices and go to town!
Ingredients:
3-4 Cups of frozen hashbrown taters (or if you're ambitious fresh grated taters)
1 small onion; diced
1/2 Red Bell pepper; diced
2 extra lg button mushrooms; rough chop
1/2 Cup diced pepperoni
1 Cup or so shredded cheddar cheese
4-6 eggs
milk
salt
pepper
The following spices are all to taste: Italian seasoning, garlic powder, paprika, parsley, ground cayenne pepper
Directions:
Pre-Heat oven to 425 degrees.
In a 9"-10" well-oiled iron skillet, place and press the hashbrown taters in an even layer on the bottom and up the sides. Sprinkle with salt, black pepper, garlic powder, ground cayenne (use sparingly), Italian seasoning, and paprika. Place skillet in oven and bake for 22 minutes or so (just until the potatoes barely start to turn brown). When done, take the skillet out (CAREFUL IT WILL BE HELLA HOT!!!) and place aside for a minute while you get everything else ready.
Lower the oven to 350.
In a bowl, mix together the veggies, meat, and cheese.
In a separate bowl, whisk together the eggs, milk, parsley, and some salt and pepper.
Place the veggie mixture and spread evenly on top of the hashbrowns in the skillet. Next, pour the egg mixture over the top.
Place back in oven for about 20-25 min.
Set the broiler on High. and broil for only 1-2 min. to finish the 'pie' and to golden the top.
Slice and serve!!!
