Shortbread ( A GOOD HOUSEKEEPING COOKERY COMPENDIUM compiled by The Good Housekeeping Institute, London ~ usually recipes by Mrs. Beeton )
6oz. Flour
4oz. Butter
2oz. Sugar
A pinch of Salt
Sieve flour and salt and rub into fat. Add sugar and knead mixture until it binds together.
Roll it out onto Baking Paper as a round 'cake' then crimp edges, prick and mark into wedges.
Place in tin and bake in slow oven, 325*F (Mark 2) for 1 hour or until lightly brown. Cool and dust with sugar.
*I added my own twist by replacing the butter with Olive Oil spread and I placed the sugar into a pestle & mortar with a teaspoon each of Schwartz Mixed Spice, Cinnamon, Ginger and Clove spices. I crushed this mix of sugar and spice to a fine powder then mixed with the flour and fat and salt. Later, once baked, I dusted the shortbread while still hot with the sugar so that it would melt and glaze the top of the shortbread with the spice.
