A sunny skewered senation for a heathy hunger busting meal from the kitchens of
archadia
Sometimes I meander through the meat department on Sunday evening and see what's in the "last chance" bin. (You know... the bin that has everything marked off two dollars?) Well on this particular day, I spied a pretty sweet deal on some lamb chunks that looked like they were for a stew or something, but they were pretty lean-looking, even for lamb. I decided that it would have a different fate.
Lamb Skewers!
You guys know how much I like marinades, right?
This one was simple; stuff I had around already, mostly:
1/2 c extra virgin olive oil
juice and zest of one lemon (the other is sliced)
2 Tbsp minced garlic
2 sprigs (or so) or fresh rosemary)
salt and pepper to taste
Shake it all up in a plastic container and cover your meat (I only had about a pound) in a zippered plastic bag. reserve the rest to drizzle over top.
I marinated the lamb chunks for about a half an hour while I chopped
1 red pepper
1 green pepper
1 sweet onion
1 small yellow squash
1 small zucchini
1 lemon
and cleaned off some white steak mushrooms and grape tomatoes. I had purchased some medium skewers and made a pretty pattern with the veggies and the meat. I spread them evenly (though tightly together) on a roasting platter, then happily sprinkled them with the rest of the rosemary sprigs and the marinade and slices of lemon (and some extra tomatoes). I roasted them at 425 for about 20 minutes (until the lamb was done and the veggies were golden). Turn them over with tongs after ten minutes.
Discard lemons. Eat tomatoes as chef's tax. They were yummy as a light lunch! Best baby animal I ever ate ;_;
Feeds about 4 people (or one hungry couple ^^;;)
(picture is before they were cooked... I did not take them out of the oven and my husband had eaten some before I could set them up! Ger! Hungry husbands!)
