Anyway, long story short is that I lost to Brock, due to wildly unlikely circumstances. Despite shittons of sand in his eyes, Onix managed to do all of the following the turn after I sent Coal out:
- Go first
- Rock Tomb
- Hit
- Super Effective + Critical Hit
... and that equals a 1-hit KO from full HP for a level 16 Charmeleon.
So, instead of giving up this early due to losing my starter, I decided to fudge the rules a bit and simply say it was a bad dream and try again. I probably won't give myself such a luxury again, but I'll be wiser and more careful now.

I'm pretty sure Bulbasaur's Leech Seed and general ease of beating Brock and Misty would make it the only viable choice so you don't have to luck into capturing useful Pokemon that early.
I think if I were to even approach anything like this, I would only count deaths vs trainers so train-spamming could be done liberally. But then I'd never accept silly rules like these in the first place. :I

Remember, the enemy will get a free turn if you switch in. And if you change pokemon they lose their buffs - the usual thing to do is to use Metal Claw on Geodude, to get an attack boost, and carry it through to Onix.
But yeah, crits are basically the most annoying thing in a Nuzlocke.
