Another recipe that I actually had planned to use in my cook book and had made a sample page

Now some of these are plain (my fav), others are topped with strawberry, and the others are topped with nutella
CheeseCake
3 (8oz) packages of Cream Cheese
1 cup sugar
5 eggs
1/2 tsp vanilla
1 box nilla wafers
icing
1 cup sour cream
1/4 cup sugar
1 tsp vamilla
jam or jelly of your choice
1. preheat oven to 300 degrees. Line muffin tins with paper baking cups. Place one nilla waffer in each
2. Combine cream cheese, sugar, eggs, and vanilla in large bowel. Beat untill mixture is smooth and creamy. fill each cup 2/3rds. Bake for 40 minutes
3. While the first batch is baking prepare the Icing. Combine sour cream, sugar, and vanilla. Beat until smooth.
4. Remove the cupcakes and let cool for 5 minutes
5. Frost and dot each cupcake with jelly. return to the oven for 5 minutes.
6. Remove from oven and let cool. remove cupcakes from tins and refrigerate to set

Just made some of these for a "finger food party" coming up real soon. Had to have one for myself.
Enough for 24 of medium size cupcakes.
First batch: Flawless
Second batch: Forgot the wafer on the bottom.
Instead I stuck it on top after the 40 minute cycle, kind of halfway sticking out. This helped to disguise the low amount of icing.
