so, I had some salmon. I decided to eat it!
was gonna bake it, but I had this mirepoix going [celery, onions, carrots] and decided to simmer them to carmelise the flavors, and decided couscous is needed, getting the idea from alton brown, I used a steamer to steam the couscous like he instructed in the "ill gotten grains" episode of Good eats. added some chicken stock to the veggies, seasoned with garlic, crushed red pepper, thyme, and rosemary, and of course, salt, and poached the fish for about 15 minutes. it's pretty darn good!

I love rice and veggies with my salmon!
carrots and onions are a must in the mix as well. Recently I've been adding chopped cucumber to the mix since the bits absorb the surrounding flavors very nicely while still having a bit of a crunch. The seasoning looks spot on in this, well done :3
