Week 10, Alfred Portale. First time ever working with rabbit, and it was okay; good doneness on the legs, but a bit overdone on the saddle and tenderloin. Sauce was nice and thick, as was the white bean paste in the center. The braised red cabbage was appropriate for the dish, and perfectly done but needed just a bit more.
