Had extra pumpkin puree. Made muffins. Streusel topping.

Pumpkin Muffins w/ Streusel Topping
Makes ~29 135g (~4 oz.) muffins
Muffin batter:
A.P. Flour 780g (~1 lbs. 10 oz.)
Baking Soda 6g (~1½ tsp)
Baking Powder 12g (~1 Tbsp)
Cinnamon, ground 22g (~1½ Tbsp)
Clove, ground 2g (~1 tsp)
Ginger, ground 7g (~1½ tsp)
Cardamom, ground 1g (~½ tsp)
Eggs 8
Sugar 1260g (~2 lbs. 10 oz.)
Vegetable oil 242ml (~1 cup)
Salt 15g (~1 Tbsp)
Pumpkin puree 960g (~2 lbs.)
Orange juice 360ml (~1½ cups)
Streusel topping:
A.P. Flour 480g (~1 lbs.)
Cinnamon, ground 2g (~1 tsp)
Salt 6g (~1½ tsp)
Brown sugar 168g (~½ cup + 3 Tbsp)
Sugar 120g (~½ cup)
Butter, unsalted, cold 360g (~12 oz.)
1. Heat oven 400 F.
2. Sift dry ingredients together, except for sugar.
3. Beat eggs, sugar, oil, and puree together until combined. Add dry ingredients, mix together. Add orange juice, and mix until smooth.
4. Cut butter for streusel topping into small (½ in.) cubes. Mix with other streusel ingredients until clumpy.
5. Pour equal amounts of batter into greased, or paper lined muffin tray (~3/4 full). Top with streusel.
6. Bake until tops bounce back to the touch. ~18-22 mins.
