Well, today I did eight batches worth (Four double batches) of fudge. Had to break out some older pans just to hold all the batches since one has to let it cool properly before depanning.
From left to right I did...
Semi-sweet chocolate, White chocolate, Dark chocolate mint, and Nutella fudge.
Nutella (For those who are unaware) is a hazelnut and chocolate spread. Probably my favorite of the bunch, though all are very good.
I'll have recipes up either later or tomorrow most likely once I get some photos of them out of the pan and dressed up a bit.
These and cookies will be available for trades during the holidays, or I might sell too if I can decide on a pricing. http://www.furaffinity.net/journal/2914158/ for my journal on a bit of trading! I do take some requests on this but make no guarantees on flavors, depends on availability of ingredients and costs.
The biggest hurdle on fudge? Shipping... While it ships really well it's quite dense and heavy and by weight a small box can actually weigh quite the large amount at the post office. I think I'll be looking into the flat-rate boxes and seeing what I can manage on different sizes. I think last year I sent out like twelve boxes of fudge and probably got around $90 or more in shipping charges, and that's not including the boxes I bought and packing supplies. Ships really well though!

3 Lbs of Butter
48 Oz Evaporated Milk
Around 90 Oz of assorted chocolate stuffs
8 Egg Whites
Several Tsps of Vanilla extract, and a tsp of Peppermint extract.
