Week 4 of Art Culinaire, where we plate dishes from Thomas Keller's French Laundry. A bear of a dish to do in only two, 5 hour class periods, between marinading, and slow braising. Shredded oxtail mixed with Bruinoise, shittake mushrooms, and salsify.
