After being at a family BBQ lunch we came home with a small stack of leftover mixed meats and salads. Some of it fed the dog that night and the chickens too. Dinner was easy we reheated what needed reheating and ate them with salad but there was still a lot of leftover meat and we had leftover meat from a pork roast. I hate waste so with a bit of invention and an obscure memory of something my mother did when I was a child (over 30 years ago) we get this smooth delightful dish. The meat is extra soft because it gets cooked for a second time in a moist bath of flavours and we get some healthy vegetables in there too.
This is a great way to use up any left over meat, veg, slightly limp veg and odds and ends in the fridge or panty. You can use canned veg, fresh veg or frozen veg. It's one of those dishes that almost anything goes. I've used leftover bbq onion, bbq or roasted potatoes, baked potato, roasted carrots, roasted parsnip, roasted pumpkin, cooked chicken, pork, beef, lamb, sausages, minced meat and it has always ended up as a family favourite.
Mixed Meat Leftovers Curry/Stew
Ingredients
Leftover meats (I used 5 BBQ sausages, 2 BBQ t-bone steak, 2 pieces BBQ steak, 8 thick slices roast pork with all bones removed and the meat then diced)
4 medium potatoes (peeled & diced)
½ butternut pumpkin (peeled & diced)
1 Large sweet potato (peeled & diced)
2 medium carrots (peeled & diced)
1 cup mixed peas, carrot, corn (canned or frozen)
1 cap condensed tomato soup
1 tbsp honey
1 tbsp peanut butter (smooth or crunchy)
3 cloves of garlic (peel & crushed or finely diced)
4 beef stock cubes
8 small Mushroom (diced if larger)
2 sticks celery (leaves & stalk, diced)
1 tsp Moroccan seasoning (turmeric
Salt & pepper to taste
1 tbsp Curry Powder
1 tbsp Sweet Chilli Sauce
Water to cover (about 1.5 ltrs)
Method
Peel, prepare and coarsely dice all vegetables
In a large pot combine everything except the meat.
Cook for about 30 minutes stir once
Add in cut up meat
Cook for approx. 30 minutes more or until the potatoes are soft…stir at least once if not more to avoid burning.
To Serve
May be served on its own or with a bed of rice or noodles
Image is the curry/stew served with noodles.
Variations
1. Add 1 can of apricots
2. Add 2 green peeled & sliced bananas
3. Add diced apples
Notes:
Over all this ends up as a nice well balanced and nutritional dish.
