Plague doctors were the doctors that tended to plague victims waaay back when. They did your typical old school doctoring.. leeching, blood letting, and crude medicine since there was no cure for the plague at the time, they kind of just did the best they could. The mask held herbs at the end of the beak, to mask and filter the smell of the sick who smelled practically of corpses. They showed no skin at all so as to avoid contracting the plague.

Oh, cool! Based on the somewhat fantasty visual aesthetic in your depiction here, I would of thought they were some kind of fantasy doctors studying a fictitious field of medicine in an imagine universe.
Knowing that they were for real, though? Hardcore. My has tripled.

They also commonly carried a cane, so as to avoid contact even further. Also, the herbs and scented flowers in the beak were not just there to cover up the smell. It was a time (that lasted up until germ theory finally crushed it) that believed that sickness was spread by bad smells, called miasmatic theory.
