Stunning salmon with versitile and vivacious vegetables delightfully displayed from the kitchens of
junowolf
So I went miso crazy tonight. I've had 4 pounds of the stuff burning a hole in my fridge and I wanted to use it hehe.
Right: Fresh roasted red pepper fettuccine with sun dried tomato miso pesto.
Center: Miso glazed salmon grilled on a cedar plank soaked in white wine, on top of baby greens with a key lime miso vinaigrette.
Left: Steak green beans. (sauteed in butter and steak seasoning :P)
Recipes:
Salmon:
1/4 cup brown sugar, packed
2 tablespoons low sodium soy sauce
2 tablespoons hot water
2 tablespoons miso
Combine and marinade the salmon for 1 hr. Cook however you like (grilling or broiling works best)
Pasta:
2.5 cups AP flour
2 eggs
1 cup pureed roasted red bell pepper
1 tsp salt
1 tbps olive oil
Combine either by hand or in a stand mixer. Kneed for 5-10 minutes until elastic and smooth. Coat a medium size bowl with olive oil and rest the dough for 1 hr covered.
Form the dough into whatever style you like.
Miso Pesto:
4 ounces sun-dried tomatoes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 tablespoon chopped garlic
1/4 cup chopped pine nuts
3 tablespoons chopped onion
1/4 cup balsamic vinegar
1 tablespoon tomato paste
1/3 cup crushed tomatoes
1/4 cup red wine
1/2 cup olive oil
1/2 cup grated Parmesan cheese
3 tbsp miso or to taste
salt to taste
Place all ingredients in a food processor and process until smooth but not a paste.
