Heyo. I am working on a book called Go Sushi about making homemade sushi with only cooked fish and home made sauces. Here's an image starring one of our friends the Sushi Dragons. I'm uploading my sushi recipes in stages but here's how to make the rice.

Sushi Rice

Two Cups Sticky Rice
Three Tablespoons Rice Vinegar
One Tablespoon Sugar
One Teaspoon Salt

Cook the sticky rice according to the manufacturer’s directions. Many recipes for sushi insist on rinsing the rice first. I have never found this makes a difference and so I skip this step.

Let the rice cool.

When it is room temperature combine the rice vinegar, sugar and salt in a bowl. Microwave and stir until it’s combined. Pour this over the rice and gently fold it in with a wooden spatula. Do not press or crush.

This rice can be hand formed into sushi or used as the base for a sushi bowl.
