If I remember correctly, the germs are on the shell of the egg, so as long as you're careful when breaking it (and don't wash the egg), you should be okay.

Also you can quickly fix a split mayonnaise by either adding another egg yolk, some warm water or a little bit of vinegar.
A 'cheat' to help beginners is to add a teaspoon of mustard. It already has emulsifiers in it and it does taste nice. Likewise it can be used to fix the split if you've already used mustard.

-artichoke oil (specialty if not combined with olive oil)
-Basil oil (Basil ciao basil ciao basil ciao)
Note: Basil oil will be more likely to turn your mayo green for St Patrick's day than other oils
Otherwise inoffensive:
-canola oil
-vegetable oil/soybean oil
-coconut oil w/ bacon grease
Notice: if you drain all the egg whites and exclusively want to use yolk, you are now on your way to make japanese mayo/kewpie instead. Netizens, you have been warned. Im not sure who out there likes mayo but doesnt like kewpie, but they have been warned xD
