I just realized that all of the dishes I have submitted here have been primarily vegetarian...I didn't submit a pic of my shepherd's pie, I will have to when I make it again...

well the farfalle is boiled of course with vegetable oil added tot he water so the noodles don't stick together.
Then you chop up four or five small sweet peppers [or two to three large ones] and two cloves of garlic [or you can use a couple fork fulls of chopped garlic from a jar] and put it in a hot skillet with three tablespoons of oil in it and let it go, stirring occasionally.
While the peppers and garlic are going, chop up a medium to large eggplant into cubes and toss that in with the peppers and garlic. at a tablespoon of water and stir it around to fry.
Then get out a can of diced tomatoes [any kind you like will do] drain them mostly and then put them in the skillet with the veggies and add a cup of vegetable stock and a quarter cup of basil.
Let it simmer until the farfalle is done [maybe ten minutes or a little more].
Strain the farfalle and combine it all in one big pot and you're ready to eat :3
