I could be wrong, but I think the joke is that pink Sylveon equals Flareon, blue Sylveon equals Vaporeon, and yellow Sylveon equals Jolteon, the least popular of the original eeveelutions.

the other two's coloration are more like the trans flag, while the third Sylveon is just yellow and white and clashes with the theming I think
