Week 8; custards. Here we have a decent set of classical baked creme brulees with blueberries as a garnish.

Both are effectively the same custard base (Creme Anglaise), but from different parts of the world; Creme Brulee from classical French cuisine, flan originating from Latin/Central America. The other difference is effectively where the sugar's caramelized; on Creme Brulee it's insta-caramelized with a blowtorch, of under a broiler/salamander, in flan, caramel is poured into the ramekin before the custard, and after being baked, it's inverted onto a plate.
