I've got this great premise planned out for a monster girl that can bend the space-time continum and have omnipotence, but i'm at a loss for an actual creature that can do this without stepping into realms of deitism and godhood.

Well, this gets into questions of what defines a god. Really, if something is omnipotent, it's already a god by some standards. As far as omnipotent or near-omnipotent creatures, the only ones that come to mind are Ethers and Umbral Blots, both of which are pretty inhuman and, to be honest, kinda bland. There are also abominations, but they're not really omnipotent except within their limited zone of influence. If we get out of D&D monsters, we could also add Primoridal/Titans, which are sort of proto-gods, but you said you're trying to avoid divine monsters.
The visual effect there kinda looks like a First Guardian, with the glowing green "spacey" energy and pale appearance.

Just go with aliens (e.g., the grays), brah.
"Sufficiently advanced science/technology" and all that. It's been done before by sci-fi, and they've crossed over into fantasy enough times that it could be done.

I am sure you've moved on by now but this is the first time I have seen this and inspiration drives me.
I can think of a few:
Inevitable: A creature of cosmic order and law, this tiny schoolgirl bears the power to strike down gods themselves if they too greatly warp or defy the natural order of the universe. She brings balance to the unbalanced, she bears down those who would violate the laws of the universe, and she hunts the tears in the fabric of space time and stitches them closed with the needles of her mind. She is neither good nor evil, she simply is. But the duty of the guardian is a lonely one, and her heart is not made of stone...
Titan: This amazonian schoolgirl has the powers of the gods, but none of the responsibilities. Though a mere youth she is nearly 7 feet tall and has powers beyond mortal imaginings. Despite her power, however, she is inexperienced, and is finding the other kids in her school interesting in...new ways of late. Does her pedigree as a titan demand she ignore the lesser beings and walk the path of higher powers? Or will her growing desires lead her down a different trail?
Wytchborn: The child of an arcane experiment by a powerful sorceress, this unassuming schoolgirl is fairly dripping with arcane energies, will her powers consume her and those she loves? Or will it allow her to do things they can scarcely dream of?
