For this Deltarune AU I'm currently doing, The Knight has been reimagined as the personification of self-depreciation and an exaggeration of the way canonized works are treated as inviolable and sacrosant, worshipped as a religious belief even by some folks.
There's some meta commentary going on here that I wish I could explain in detail, like taking a character from canon and reworking them to be something else different from canon while making a commentary on the state of canon within a non-canon work, but I guess the artwork speaks for itself. Or doesn't, I think I can go very meta to the point I may not understand what was the initial intention, and I do like to leave some of my works (or in this case, a transformation of a work) to the viewer's interpretation.
