Recipe for

I wanted to tr a meat that not often used. Beef heart tastes like a mix of steak with a little bit of game, is super lean and healthy and is quite cheap. So I gave it a go. This version I made with star anise and cinnamon, giving it a winter feeling and warm taste, trust me, its delicious
Ingredients:
- 500gr beef heart
- 2-3 onions cut into small cubes or thin slices
- 3-4 gloves of garlic, minced
- 500ml red wine
- 500ml beef or vegetable stock
- 1,5-2 pieces of star anise
- cinnamon
- salt and pepper
- butter
(- I also used marjoram and thyme)
I bought precleaned and cut beef heart. If you cant buy it prepared:
(- be sure to clean the beef heart with clear water to get rid of an remaining blood
- dry it with kitchen paper towels
- cut off the fat
- cut it open and remove all heart valves, connctive tissue and such from the inside, so that ou are left with pure muscle tissue)
- cut into bite sized cubes or thin stripes
- sear it under high heat
- add the onions and roast until glossy and fragrant
- add the wine and beef stock
- add the star anise cinnamon, salt and pepper (not to much salt as it will reduce)
- reduce heat to low or medium and let simmer for at least 3h
- the longer it simmer, the better
- make sure to add liquid if too much evaporates so it doesnt burn
- you an try it and taste from time to time but give it some time or else the heart can be tough
- when its done and the sauce is thin, you can add some starch slurry
- at this stage ou can again check if its salty enough
- in the end ou an add some butter, making the sauce richer and glossy
This tastes nice with potatoes or with fresh breadand some parsle and lemon on top.
