Not something I usually post, but I was happy with how these turned out. Mmmm.
I decided to welcome fall early. :D Bring on the pumpkin treats!

Filling
1 pkg cream cheese, softened [8oz]
1 egg
1 Tbsp sugar
A few drops of vanilla [opt.]
Batter
2 1/4 cups all-purpose flour
3 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
2 eggs, lightly beaten
2c sugar
1c canned pumpkin [about half the can, I believe]
1/2c canola oil
12-24 pecan halves [opt.]
1. Filling; beat cream cheese, egg, sugar and vanilla in a small bowl until smooth and set it aside.
2. In a large bowl, combine flour, pumpkin pie spice, baking soda and salt.
3. Separately, beat the eggs, sugar, pumpkin and oil; stir into dry ingredients just until moistened.
4. Divide half of the batter among 24 greased or paper-lined muffin cups. [NOTE: I used larger muffin tins and only made 12 muffins because it's what I had and I ended up with huge muffin tops. :D]
5. Drop filling by teaspoonfuls over batter.
6. Top with remaining batter. Place a pecan on each muffin if desired.
7. Bake at 350 degrees F for 20-22 minutes [I think I went 25 mins for my big muffins] or until a toothpick comes out clean.
8. Cool for 5 minutes before removing from pans to wire racks.
