Since I gave myself a day off today, I finally had the day to cook a few things!!
This is a rather simple recipe -
8 red potatoes, cut into halves
1 large baking potato, cut and sliced into halves
2 tablespoons olive oil (methinks I might have overdid it here, but I'd rather have too much than not enough.)
3-4 sprigs of fresh thyme
7 cloves of garlic with skin left on (they'll come off once done roasting)
salt and pepper
1/2 cup or more of grated cheese of your choice
To make:
Get yourself some parchment paper and cover your baking pan, which will save you a lot of headaches in cleanup
Shake the cheese all over the paper
Lay out your potatoes and garlic and don't crowd them as that will help it bake evenly
Coat with the olive oil, then season with salt and pepper
Then bake at 350 F on convection bake for 20 minutes, then take out and serve - you should get a nice crispy cheese crust right on the potatoes, also known as a "frico".
Serve and enjoy, but next dish is next!
