Terrific Tomatoes ready to top a pizza or add that flavour boost to any dish not to mention nice to snack on from the kitchens of

This isn't so much of a recipe as a neat tip for dried fruits or veggies like tomatoes.
For this batch I marinated them in my own vinaigrette for a day, then used my food dehydrator on them. Did you know you can do the same thing in your hot car all day over the course of a few days? You bring them in, of course, at night, but the heat needed to dry the tomatoes would be available in a hot car parked in direct sunlight all day... might as well use the energy! (Plus your car will smell like pasta =p).
I cut a half bushel of beefsteak tomatoes (firmer, less liquidy tomatoes, romas might work, too) into eighths. I marinated them in:
extra virgin olive oil
red wine vinegar
parsley
Italian seasoning
I mixed my marinade using the pulse function on my blender.
I put the tomatoes on the racks and let them dehydrate for 2 days on the low vegetable setting.
Don't let them get crunchy, they should be chewy and bursting with flavor!
If you have a vacuum sealer, you can keep them at room temperature in a cool place until ready to use. If not, you will have to refrigerate them, just to be safe. These make great holiday gifts, as buying them at the store can be rather pricey. *eats some*Mine won't make it until the holiday. Mmmmm.
Great way to preserve a seasonal fruit or veggie, though.

Well the dehydrater i have, if you put the trays in upsidedown they dont sit on the base quite right andd there is a gap between the top tray and the cover part, or atleast thats the case with mine. also, it holds larger pieces of vegies, or whatever your drying. I dunno if thats the case with yours but thats how it is with mine.
