Marvelous melt in the mouth mackerel with a ravishing rhubarb vinigrette full of flavour and colour from the kitchens of
aerials
Presenting, today's dinner. This stuff is glorious, quite easy to make, and perfect summer food! If you like mackerel, you gotta try it this way. And if you don't like mackerel or don't know if you like mackerel, well, time to give it a shot and be a convert!
What You Need For The Vinaigrette:
100 grammes of rhubarb, chopped into about a centimetre-long chunks,
2 table spoons of sugar,
2 table spoons of lemon juice,
2-3 table spoons of white balsamic vinegar, according to taste,
1 tea spoon of fresh ground ginger,
A pinch or two of salt,
2-3 table spoons of fruity olive oil,
A dash of sunflower oil for the frying pan,
Rose pepper and lemon thyme for garnish.
Fry the rhubarb in your sunflower oil along with sugar, lemon juice and vinegar. Let it simmer for a few minutes until the rhubarb softens slightly, you want it to still hold together.
Stir in the fresh ginger and then remove the pan from the heat, let it sit for a few minutes. Add salt according to taste and then add your olive oil. Don't worry when you don't get a completely uniform mix, that just isn't possible.
The Fish
The number of fillets you'll need will of course vary according to how many people you serve. Get as fresh ones as humanly possible, catch the fish yourself if you can! I did here ^^
Season your fish lightly with salt and pepper, and fry them in plenty of butter. Take care not to fry it too hotly or too long, the last thing you want is to fry it dry and end up with something that tastes like old sock. Keep the skin on - it adds splendid taste and looks gorgeous.
Pour your vinaigrette over the fish, sprinkle lemon thyme and crushed rose pepper on top, and serve with fresh boiled potatoes and/or a light salad, Baby spinach is a favourite in mine. Bon appétit!
