Such a colourful and flavoursome meal from the kitchens of
archadia not to mention the fact that it has reduced cholesterol.
Shown here served with a grilled biscuit and California steamed vegetables, this was an easy, hearty meal that was very satisfying after a long day at work. I could make these up ahead of time and then just pop everything in the grill and microwave and it was ready in 15 minutes!
Ingredients for 2 servings:
2 chicken breasts, butterflied and pounded flat
2 slices turkey ham
2 oz mozzarella or Swiss cheese, thinly sliced
1 Tbsp course mustard
1/4 c honey mustard
bread crumbs
several wooden toothpicks
basting brush
panini press or electric grill
I had actually prepared these a day in advance. To butterfly a filet, put a flat, heavy object on the breast and cut the meat of the raw chicken almost in half using a cut parallel to the cutting board. Open the chicken like a book. I placed my chicken breast in an unsealed gallon freezer bag and beat it mercilessly with my heavy granite rolling pin until it succumbed to being about a half an inch thick. You can use wax paper and a bowling ball if you like, though.
(If you want an easy meal for later on in the week, you can freeze them flat like this in the freezer in the bag.)
Spread a generous layer of whole grain mustard on top of your chicken, then a thick slice of the turkey ham, followed by a slice of Swiss or mozzarella.
Fold the sides of the filet in and sew it up nice and snug with your toothpicks. (Alternately, you can use kitchen twine to sew them together, but that's more expensive and takes more time. To easily find and remove the toothpicks after cooking, I suggest using colored toothpicks.)
Here is the part where you save yourself a lot of cholesterol: instead of using a scrambled egg to stick the bread crumbs to your chicken, cover the entire breast with honey mustard using your basting brush, then roll in your bread crumbs.
Grill on the panini press on medium/high for 10 minutes, or until cooked through. Mine came out lovely. They'd go nicely with a spinach salad, but I had none. If I'd had any spinach, it would have gone in the middle. In fact, you could put just about any filling inside. Try replacing the fillings with couscous or rice, seafood, diced tomatoes, or pre-steamed vegetables.
That basting trick works well when breading without an egg, but be sure you sear the breading on quickly to avoid the breading slipping off. You can always turn the heat down afterward. (I had no problem on my press, however.)
