This is one of my amaranthus plants, and it's by far one of the most impressive things i've ever grown. (It's really the only thing that's wanted to grow in my garden without a fight, actually. 0_o)
I've never tried growing amaranth before, but I'm always interested in trying new vegetables and stuff.. This is a grain you can eat, as well as munch on it's leaves much like spinach. Seeds aren't ready yet, but would you just look at these gorgeous flower tassels. There are several on each plant and really brighten up my sad little planting area.

If you've ever heard of Quinoa, it's sort of like that. The flower tassels turn into hundreds of little grains and you can cook 'em. Very nutritious. They had me fooled though! I grew them from seed and for the longest time they all looked so pitiful. Weren't growing at all. But in the process of a few weeks it's now almost 4ft. I hope it doesn't get too much larger. xD
You can eat that? I'd imagine it be a nutty sweetness, by looking at the colors. I've never seen something like that you could eat. Looks like it'd be an awesome wheat for bread and it kept that nice color, maybe mix it with some raisins or some dry berry. Oooo wanna make bread now. xD

Well, you can eat the grain that comes from it. I think the seeds are either black or golden, I can't really remember what colour the ones were that I planted, but yeah. You can grind it into flour, or pasta, or what have you. I've never actually eaten it myself but it's supposed to be super healthy. I might make a salad out of the leaves soon, but i'm just too scared to cut any of it. ;_;
For sure though, if I decide to sum up the courage to harvest some leaves i'll write about the experience, and when it's time to collect the grain i'll describe that also. :)

Now I'm so curious. Would it act as like flour or would it be more harder to work it. I would think it would be like faux seed, which is hell to cook with cause of its texture. A salad of that sounds really amazing, good summer salad. Citrus, berry maybe, ooooo even apple!
I know, it looks so pretty.. I wouldn't want to harm it. Hmm what else, it could be like rice. A nice pilaf with some fish, if you eat fish. I wanna plant some now. D;

I love to garden, only problem is garden doesn't like me. :C I am able to grow things to be huge, but then nothing ever grows that's edible. I have two giant zucchini plants, which grow zucchini, but don't ever grow big; they just turn yellow and die. ;; And I grew pole beans, which grew huge, but then dried up and died without any reason.
Right now I have a little plot with tomato, okra, amaranth, zucchini, watermelon, bell pepper, jalapeno, and some columbine, which are gorgeous flowers.
So far the only thing that's actually doing well is jalapeno, amaranth, and okra. The watermelon is tinyyyy still and wont get big enough before the season ends, but I dont want to kill it. :C
I have like... 10 tomato plants growing, but they only flower... no tomatoes. :/ I think it's because they are all heirloom and i've heard those are tougher to get fruit on. I don't think the flowers are being pollinated at all.

See. Something like that would piss me off and quit. But least some things are growing. Maybe the climate is effecting your plants? And pollination would be another reason. Ever seen that commercial with growing the tomatoes upside down? Found those pretty neat but too expensive.

Every other summer I grow tomatoes or squash, but other than that I usually let things run their course.
