Ecco delle crepes fatte da me
Basic ingredients for 4 or 5 people
250 g flour
500 ml whole milk
3 whole eggs
60 g sugar
40 g butter
Vanilla extract
1 teaspoon lemon juice
1 pinch of salt
Butter for cooking the crepes
Preparation:
Sift the flour into a bowl and add the sugar, a pinch of salt, and the vanilla. Gradually add the milk, whisking with a whisk to remove any lumps. Separately, beat the eggs together with the lemon and add them to the mixture. When the batter is well blended and lump-free, cover it and place it in the refrigerator to rest for about half an hour.
To cook the crepes, put a knob of butter in a pan, wait until it is hot and pour in a ladleful of crepe batter. Spread the batter evenly over the bottom of the pan and as soon as the crepe is perfectly compact, turn it over and cook for a few seconds on the other side.
