So I decided to try to make my own Philly cheesesteak for dinner. I'd never made it before but I knew what was in it. Then I found an awesome recipe from Emerill.
Anyway, used provolone cheese. Alas I didn't think to get proper rolls, so I used some burger buns that I had from a BBQ.
The only mistake I made was using a bit more oil than I should have. I was worried then meat was going to stick and burn. Still over all maybe used a tbl spoon of canola so it's not like I'm that worried.
Also, there is a local sandwich place I sometimes go to and get their version of a
cheesesteak which is the normal one but they put mayo on the bread. It bumps the taste up 10 times I swear. So I did that on the right sandwich, and I have to say it made a huge difference.
I will def be doing this again!

EDIT:
1/2 small onion, sliced thin and then cut up a little more for small pieces
1/2 green pepper sliced thin, then the pieces cut in half to make more manageable size.
1 tsp minced garlic
Sautée in 1/2 tbs spoon canola oil and 1/2 tbs margarine till onions caramelized (about 5-6 minutes)
About 1/4 lb steak sliced thin.
Move veg to side of pan and cook steak until no longer pink. Use two spatulas and pull strips apart while cooking, to make small chunks. When no longer pink mix together with veg, and top with slices of Provolone cheese. When cheese is mostly melted, mix up everything for a nice even spread of the cheese. Serve onto buns.
Makes 2 large burger-bun sized or one large long Italian roll.
