To add to the previous main course is this stunning side dish from the kitchens of
starallon
This is more of a side dish than a main course, but quite a tasty (And healthy) Side dish it is!
I'm showing it here with a little frozen stuffed chicken thing that I baked up, why? They are easy and sometimes go BoGo, so easy meal.

Soft summer squashes are great to play with both in color and flavor and this makes for a delectable side dish that can impress guests along with providing a nutritious side. It's also very quick to put together and you won't need much more than a knife, peeler, and a saute pan.
Ingredients :
1 Medium Yellow Squash
1 Medium Zucchini
1 Small Yellow or Red onion
1 small carrot
1/4 cup pimentos
1 tbsp garlic
1 tbsp Olive oil
1/2 tsp seasoned salt
1 Tbsp butter
Using a peeler, peel off "ribbons" of Zucchini, squash, and carrot into a bowl. Thinly slice the onion into small ribbons (Cat the onion in half, then slice along it to create little ribbons, starting from one side and going up.). Combine all together with Pimentos, Garlic, and Olive Oil.
Preheat large saute pan on medium high for three minutes. Add in vegetables with garlic and oil. Sprinkle on seasoned salt. Cook for two to three minutes, gently working ribbons of vegetables around with a tongs until vegetables are softening. Reduce heat to low and add in butter, tossing to coat and creating a thin sauce on the vegetables.
Plate and serve!
