Here's a mouthwatering main-course from the kitchens of
starallon
It may not look like that much on the plate, but it sure is pretty gosh darn tasty... and when you wrap it up in a tortilla, who is going to see it then anyway, right?
I'll do the rice first then do the fajita mix. Yes it looks like hotdogs, but they are polish sausage dogs. Hey, it's what I had, though upping this to some chorizo would probably be really awesome!

Curry Rice with Black Beans
A very simple rice dish that's colorful on the plate and adds extra flavor to common rice.
2 cups water
1 Tbsp sweet curry powder (Or whatever your favorite might be.)
1 Can Black beans (Drained and rinsed. They'll turn your rice black if you don't rinse.)
1 Cup Jasmine Rice
Bring Water and curry powder to a boil. Add in rice and stir. Cover and bring back to a boil. Put heat on low and cook for twenty minutes or until rice is tender. Mix in Black Beans and replace lid and keep on low for several minutes until beans are hot. Serve!

Spicy Sausage Fajita filling.
This makes use of Jalapenos and hot Sauce to get a nice spicy flavor to this great filling. If you mixed this with a can of refried beans in the end makes an easy enchilada filling for baking (Or my favorite, deep frying as chimmichangas. ) This is nice and quick to throw together so it's great when you want to make a small batch just for yourself, or perfect for feeding a crowd too with a bit more.
2 Polish sausage dogs (Or a few Chorizo links), sliced thin.
1 Tbsp minced garlic
1/2 cup corn
1 can Hot Rotel Tomatoes (Tomatoes with Habeneros)
2 Sliced fresh jalapenos
1 carrot sliced thin (Optional, I just happen to have a lot of carrots, so I use them in everything lately. Good for you anyway!)
1 Medium onion sliced thin.
2 tbsp olive oil.
1 tsp hot sauce.
Preheat large saute pan on medium high. add in oil, onions and jalapenos. Cook until onions are translucent. Add in sausage, corn, carrots, and garlic. Cook for several minutes, stirring occasionally. Add in can of rotel tomatoes and hot sauce. Simmer for a few minutes until liquid is thick in pan creating a nice sauce. Plate and top with shredded cheeses.
Serve with Tortillas and Rice and enjoy
