There were a number of piebald and albino whitetail deer at the Deer Ranch near St. Ignace, MI. They would take food from your hand in most cases. The bucks were wary though, probably because of growing antlers.

I don't think I've ever seen velvet like that!
As I recall, albino deer were specifically bred to be ranched, to keep them visually distinct from wild deer. At least, that was the explanation I got from a fellow who was ranching deer, and who was lobbying the state government to make it legal to sell farmed venison.
