His name is Mimer. He's the god of wisdom and are Odin's advicer.
His head was seperated from his body by a person named Høner who wanted to start a war between the two god speices, the As (who lives in Asgard) and the Van (who lived in Vanaheim).
Høner's plan failed when Odin were able to bring Mimer's head back to life.
