There aren't any beetles that do that to a living person, as far as I know, and they only called them scarabs in the movie because of how common scarabs are when mentioning Egyptian stuff, real scarab beetles are a subset of dung beetles. These are jeweled beetles from Thailand, they harvest the wings and eat the rest.
