Great Gluten Free Granola for all, a healthy tasty breakfast from the kitchen of
wenchinthegears
The Saytr has a difficult time trying to get breakfast food considering her issues with gluten and vegetable oil (which all breakfast items are saturated with). So I, being a concerned spouse, decided to make granola!
Ingredients:
3/4 stick of butter (melted)
2 Tb olive oil
1/2 cup molasses
Enough water to bring the combined wet mixture to 1 cup total
4 Tb Bee pollen
6 Tb Ground flax seeds (ground)
2 or 3 Tb soy flour (as preferred)
4 Cups of Oats
1/2 Cup candied ginger (minced)
1/2 Cup pepitas
1/4 Cup sunflower seeds
3 or 4 dried persimmons (diced)
Scant 1/4 tsp salt
A dash of cinnamon and nutmeg
Directions:
1. Mix all of the dry ingredients together in a large mixing bowl. In a measuring up mix all of the wet ingredients.
2. Pour the wet ingredients into the dry and mix until the oats are all coated.
3. Put the mixture down on parchment lined baking sheets enough so that you can spread it thinly.
4. Bake for 10 minutes, and then stir the mixture thoroughly. Bake for another 10 minues and mix again. At this point set timer for 10 minutes but check it after 5 minutes. When it's done it will be fragrant and "cooked" smelling... and will taste reasonably good as well. Take it out once you're satisfied and let it cool. It will firm up and get crunchy while it's cooling.
