grandpandaman is here for the summer and he bought me a book of brownie recipes
so I made one of them! maybe later I'll make one of the more interesting ones, like cola brownies or banana ones with peanut butter icing. these are super dense and good though
INGREDIENTS
8 tablespoons butter (1 stick)
9 ounces semisweet chocolate chips/chopped chocolate
2 ounces unsweetened chocolate, chopped
2 large eggs
1 large egg yolk
1 cup sugar
2 teaspoons vanilla extract
2/3rds cup all-purpose flour
½ teaspoon sugar
First things first, grease and flour an 8-inch square pan and preheat the oven to 350°F. Also if possible make sure that the oven rack is in the lower third of the oven
So next put both kinds of chocolate and the butter into a double boiler and stir till it's all melted together. Take the chocolate off the heat and let it cool for ten minutes or so.
Whisk together the sugar and eggs for about five minutes, then beat in the chocolate-butter mixture till everything's smooth.
Fold in the flour and salt with a wooden spoon. Stop once it's all mixed in, you don't want to get too much air in these.
Pour the batter into the pan, smooth it out into the corners, then leave it in the oven for 30 minutes. After taking it out, leave the pan on a wire rack to cool for at least two hours.
That's about it really, these are pretty good with milk.
Oh also if you don't have a double boiler you can make one by boiling water in a pan or rice cooker and placing some balled-up wet paper towels on the edges, then balancing a metal bowl with the butter and chocolate on top of the towels! Or if you can figure out some other way to indirectly heat the chocolate and butter that would probably work too, I bet there's some sort of microwave trick if you look.
