So, I keep trying to paint. And I keep getting to this point...and then I stop.
Because I can't figure out where to push things from here. I have a fairly mediocre contrast that I can't seem to shake. I really want to learn how to do this in a way that I don't need to filter for contrast/colours. I slide the contrast and b/w bars for reference frequently, so I can see what I COULD be doing, but I can't seem to get out of the muddiness. This colour choice is very bland, but I guess I'm just...doing this because I need to push through these problems on my way to fix them? I haven't even practiced half the 'issues' that I think I have because I get overwhelmed with trying to fix my mistakes before I make them.
I know that I rarely respond to critique, but that's mostly because I'm still trying to think of just HOW to respond to it, because I take on board everything you guys say and I can't tell you how much it helps. I will reply to each critique on each picture I have made, eventually, when I have managed to fix that problem.

I work the same way. I will just state what I do from here.
I just start "refining" it. Paint on top of what you have and basically, try to get rid of the lines. While doing so, add the textures to your objects. Make the scales shine, rocks look more like rocks, add highlights on the trees/bushes to make it all "pop". I start from my focus point and move my way away from there. Some work on parts they do no like doing first then do the parts they like doing last (depending on preference).
Push your shadows and highlights around until you get the feel of what you want. Most important of all, try to experiment and keep it fun! :)

Mostly I think you just need to get more bold in your decision making. In opaque mediums (even virtual ones) it's much easier to make everything bold, strong, and "too much" and reign it back in as you go, than it is to start timid and try to push it deeper later.
Work from your darkest values up to the lightest, as opposed to light to dark and it will be a lot easier to get a feel for that type of decision making.
